5 Minute Coleslaw

Ingredients

- 1/2 small green cabbage
- 1/2 small red cabbage
- 3 medium carrots
- 1/2 cup mayonnaise
- 1 tablespoon sugar
- 2 tablespoons red wine vinegar
- 1 teaspoon black pepper
- 1/2 teaspoon salt
Recipe
- 1 slice cabbages into thin shreds, place in large both. (don't worry if it looks to full, this will shrink in volume once dressing is added.).
- 2 grate carrots and add to bowl with cabbage.
- 3 *feel free to use a food processor for the above directions to save some time, make sure to use the slicing & grating disks.
- 4 in a small bowl whisk together mayonnaise, sugar, vinegar, salt & pepper until smooth.
- 5 pour over cabbage & carrot mixture. stir slowly until coated. let stand 5 minutes or until it looses a bit of volume.
- 6 note: this dressing also works great for a bag of coleslaw mix, it is dryer than fresh cabbage so it soaks up more dressing.
- 7 if not serving right away, refrigerate for up to 2 days for fresh or 1 day for bagged.
