5 Minute Coleslaw

Ingredients

  • Servings: 10
  • 1/2 small green cabbage
  • 1/2 small red cabbage
  • 3 medium carrots
  • 1/2 cup mayonnaise
  • 1 tablespoon sugar
  • 2 tablespoons red wine vinegar
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt

Recipe

  • 1 slice cabbages into thin shreds, place in large both. (don't worry if it looks to full, this will shrink in volume once dressing is added.).
  • 2 grate carrots and add to bowl with cabbage.
  • 3 *feel free to use a food processor for the above directions to save some time, make sure to use the slicing & grating disks.
  • 4 in a small bowl whisk together mayonnaise, sugar, vinegar, salt & pepper until smooth.
  • 5 pour over cabbage & carrot mixture. stir slowly until coated. let stand 5 minutes or until it looses a bit of volume.
  • 6 note: this dressing also works great for a bag of coleslaw mix, it is dryer than fresh cabbage so it soaks up more dressing.
  • 7 if not serving right away, refrigerate for up to 2 days for fresh or 1 day for bagged.
