- 8 ounces baby spinach
- 1 cup mandarin orange, drained
- 1/2 cup red onion, chopped
- 1 tablespoon orange marmalade
- 2 tablespoons red wine vinegar
- 1/3 cup extra virgin olive oil
- salt
- ground black pepper
Recipe
- 1 arrange the spinach leaves on a large platter or individual salad plates.
- 2 top with the mandarin sections and chopped red onion.
- 3 whisk together the marmalade and vinegar.
