Baby Spinach Salad With Mandarin Orange And Red Onions

Ingredients

  • Servings: 4
  • 8 ounces baby spinach
  • 1 cup mandarin orange, drained
  • 1/2 cup red onion, chopped
  • 1 tablespoon orange marmalade
  • 2 tablespoons red wine vinegar
  • 1/3 cup extra virgin olive oil
  • salt
  • ground black pepper

Recipe

  • 1 arrange the spinach leaves on a large platter or individual salad plates.
  • 2 top with the mandarin sections and chopped red onion.
  • 3 whisk together the marmalade and vinegar.
  • 4 stream the oil into the dressing while continuing to whisk.
  • 5 when ready to serve, pour the dressing over the salad and season with salt and pepper.
