Asparagus Avocado Tomato Salad

Ingredients
- Servings: 4
- 2 cups asparagus
- 1 cup avocado (ripe)
- 1 cup tomato, vine ripe if possible
- 1/2 cup vinaigrette dressing, use your favorite
- salt, to taste
- pepper, to taste
Recipe
- 1 slice asparagus diagonally then steam the asparagus until it is still a bit firm and crunchy. you do not want it mushy.
- 2 chop tomatoes & chop avocado's add all above to a large bowl.
- 3 pour over italian or greek vinaigrette salad dressing.
- 4 add salt pepper to taste*if you like garlic add some fresh pressed.
- 5 it is always great!
- 6 toss and stick in the fridge for an hour.
- 7 ready to serve!
- 8 any leftovers squeeze a bit of lemon and toss to keep the avocado fresh for the next eating encounter.
