Asparagus Avocado Tomato Salad

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 cups asparagus
  • 1 cup avocado (ripe)
  • 1 cup tomato, vine ripe if possible
  • 1/2 cup vinaigrette dressing, use your favorite
  • salt, to taste
  • pepper, to taste

Recipe

  • 1 slice asparagus diagonally then steam the asparagus until it is still a bit firm and crunchy. you do not want it mushy.
  • 2 chop tomatoes & chop avocado's add all above to a large bowl.
  • 3 pour over italian or greek vinaigrette salad dressing.
  • 4 add salt pepper to taste*if you like garlic add some fresh pressed.
  • 5 it is always great!
  • 6 toss and stick in the fridge for an hour.
  • 7 ready to serve!
  • 8 any leftovers squeeze a bit of lemon and toss to keep the avocado fresh for the next eating encounter.
  • 9 ~enjoy~.
