Asparagus And Shrimp Salad

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs asparagus, whole or sliced
  • 1 lb cooked shrimp or 1 lb prawns
  • 1 thinly sliced lemon, seeds removed
  • 1/4 cup sliced green onion
  • 2 tablespoons minced parsley
  • 3/4 cup vinaigrette dressing
  • 2 hard-boiled eggs, sliced into wedges
  • 2 tomatoes, sliced into wedges
  • lettuce leaf

Recipe

  • 1 cook aspargus until just tender; drain.
  • 2 combine with shrimp, lemon, onion, and parsley.
  • 3 pour dressing over all; cover and chill.
  • 4 to serve, drain and pile on top of lettuce leaves.
  • 5 garnish with egg and tomato wedges.
  • 6 serve.
