Asian Summer Salad

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 8 ounces vermicelli
  • 3/4 cup carrot, julienne cut
  • 1/3 cup green onion, sliced
  • 3/4 lb cooked chicken
  • 1/4 cup vegetable oil
  • 3 tablespoons rice vinegar
  • 3 tablespoons soy sauce
  • 2 teaspoons sugar
  • 1/8 teaspoon red pepper flakes
  • 1 garlic clove, minced

Recipe

  • 1 cook pasta according to package. rinse pasta with cool water and drain.
  • 2 toss pasta into large bowl. add carrots, onions and chicken to pasta, set aside.
  • 3 mix dressing ingredients together and pour over pasta and toss.
  • 4 chill in the refrigerator at least 1 hour prior to serving.
