Asian Spinach Salad

Ingredients

- 1 (142 g) package washed baby spinach
- 2 cups cooked rice
- 3 stalks celery, diced
- 1/2 cup currants (or golden raisins)
- 1 cup fresh mushrooms, sliced
- 1 bell pepper, diced
- 1 cup fresh bean sprout
- 1 cup unsalted cashews
- 1/2 cup green onion, finely chopped
- 1/4 cup low sodium soy sauce
- 1/2 cup olive oil
- 1 garlic clove, minced
Recipe
- 1 toss salad ingredients together in large bowl. emulsify dressing ingredients by shaking vigorously in a lidded jar. toss with dressing just prior to serving.
