Ingredients

- 1 -1 1/2 tablespoon walnuts
- 2 tablespoons fat free greek yogurt, plain
- 1 teaspoon fresh lime juice
- 1 teaspoon honey
- 1/2 teaspoon ground cinnamon
- 1 large carrot
- 1 large apple, unpeeled
- 1/2 teaspoon fresh gingerroot (about 1/2 inch)
Recipe
- 1 toast walnuts in dry fry pan for about 3 minutes being careful not to over brown or burn. chop and set aside.
- 2 in small bowl make dressing by mixing yogurt, lime juice, honey and cinnamon. set aside.
- 3 great carrot, apple and ginger in food processer; place in a bowl and toss with the yogurt dressing.
- 4 top with toasted walnuts and enjoy.
