A Is For Apple, C Is For Carrot Salad

Ingredients

  • Servings: 2
  • 1 -1 1/2 tablespoon walnuts
  • 2 tablespoons fat free greek yogurt, plain
  • 1 teaspoon fresh lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon ground cinnamon
  • 1 large carrot
  • 1 large apple, unpeeled
  • 1/2 teaspoon fresh gingerroot (about 1/2 inch)

Recipe

  • 1 toast walnuts in dry fry pan for about 3 minutes being careful not to over brown or burn. chop and set aside.
  • 2 in small bowl make dressing by mixing yogurt, lime juice, honey and cinnamon. set aside.
  • 3 great carrot, apple and ginger in food processer; place in a bowl and toss with the yogurt dressing.
  • 4 top with toasted walnuts and enjoy.
