Barley, Moccasin Bean And Radicchio Salad

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 1 1/2 cups cooked cooled barley
  • 1 1/2 cups cooked cooled moccasin beans
  • 1 head radicchio, chopped
  • 2 stalks celery, diced
  • 1/2 red onion, diced
  • 1/3 cup fresh parsley, chopped
  • lemon
  • salt & pepper
  • 1/4 cup red wine vinegar
  • 1/4 cup walnut oil
  • 1/4 cup olive oil

Recipe

  • 1 mix together, chill, enjoy.
  • 2 proportions are somewhat relative and use only as much dressing as you feel the salad needs.
