Avocado Jicama Salad

Ingredients
- Servings: 4
- 3 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1/4 teaspoon grated orange peel
- 1 tablespoon fresh orange juice
- 1 tablespoon chopped fresh cilantro
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon grated fresh ginger
- 1 (1 -1 1/4 lb) jicama, peeled and cut into thin strips
- 1 yellow bell pepper, seeded and cut into thin strips
- 2 ripe avocados, cut in 1/2 inch pieces
- 1 bunch fresh watercress
Recipe
- 1 make dressing: combine all dressing ingredients in small bowl.
- 2 combine jicama and bell pepper in bowl; toss with 3 tbs dressing.
- 3 just before serving, toss avocado with remaining dressing.
- 4 arrange watercress around edge of serving platter, spoon on jicama mixture and top with avocado.
- 5 note: if you like more of a bite to your salads, finely sliced red onion rings can be added with jicama and pepper or served on side as a topping.
