Berry Rice Salad

Ingredients
- Servings: 5
- 1 1/2 cups long-grain rice, cooked and chilled
- 1/2 cup nonfat plain yogurt
- 1/4 cup brown sugar, packed
- 2 tablespoons brown sugar
- 1 1/2 lime juice (fresh is best)
- 1/2 cup strawberry, sliced
- 1/2 cup blueberries
- 1/2 cup green grape, seedless
Recipe
- 1 whisk yogurt, sugar and lime juice until smooth.
- 2 slice grapes in half.
- 3 combine berries with a light toss, add rice and toss.
- 4 add yogurt mixture to rice-fruit mixture and toss again.
