Berry Rice Salad

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 5
  • 1 1/2 cups long-grain rice, cooked and chilled
  • 1/2 cup nonfat plain yogurt
  • 1/4 cup brown sugar, packed
  • 2 tablespoons brown sugar
  • 1 1/2 lime juice (fresh is best)
  • 1/2 cup strawberry, sliced
  • 1/2 cup blueberries
  • 1/2 cup green grape, seedless

Recipe

  • 1 whisk yogurt, sugar and lime juice until smooth.
  • 2 slice grapes in half.
  • 3 combine berries with a light toss, add rice and toss.
  • 4 add yogurt mixture to rice-fruit mixture and toss again.
