Avocado, Prawn / Shrimp & Pink Grapefruit Salad - For Two 2

Ingredients

  • Servings: 2
  • 1 pink grapefruit
  • 100 g tiger shrimp, cooked
  • 1 tablespoon dill, finely chopped
  • 1 avocado
  • 1 cup rocket
  • 2 tablespoons avocado oil
  • black pepper

Recipe

  • 1 take the grapefruit, remove the skin & pith then segment it using a sharp knife - reserve the juice.
  • 2 add the tiger prawns & the dill then season with the pepper.
  • 3 peel the avocado, cut into slices & arange on two plates. pile the prawn & grapfruit mixture over the top & drizzle with the avocado oil.
  • 4 serve with the rocket.
