Avocado Jicama Salad

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • Servings: 4
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon grated orange peel
  • 1 tablespoon fresh orange juice
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon grated fresh ginger
  • 1 (1 -1 1/4 lb) jicama, peeled and cut into thin strips
  • 1 yellow bell pepper, seeded and cut into thin strips
  • 2 ripe avocados, cut in 1/2 inch pieces
  • 1 bunch fresh watercress

Recipe

  • 1 make dressing: combine all dressing ingredients in small bowl.
  • 2 combine jicama and bell pepper in bowl; toss with 3 tbs dressing.
  • 3 just before serving, toss avocado with remaining dressing.
  • 4 arrange watercress around edge of serving platter, spoon on jicama mixture and top with avocado.
  • 5 note: if you like more of a bite to your salads, finely sliced red onion rings can be added with jicama and pepper or served on side as a topping.

Avocado Dip

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 2 medium avocados, peeled and pitted
  • 1/2 cup sour cream
  • 2 tablespoons lemon juice
  • 1 teaspoon onion, grated
  • 1 teaspoon salt
  • 4 slices bacon, cooked and crumbled

Recipe

  • 1 mashed avocados with a fork, or force through sieve.
  • 2 add sour cream, lemon juice, and onion and add salt; chill.
  • 3 just before serving stir in bacon, reserving a few bits for garnish.
  • 4 serve with chips.

Avocado Mango Salad

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • Servings: 4
  • 1 avocado, halved,seeded,peeled,and cut into wedges
  • 1 mango, peeled,seeded,diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 4 lettuce leaves

Recipe

  • 1 place lettuce leaves on 4 salad plates.
  • 2 top with wedges of avocado.
  • 3 sprinkle with diced mango.
  • 4 in small bowl, combine cumin, chili powder and garlic powder.
  • 5 mix with fork until blended.
  • 6 using fingers pinch spices lightly over avocado and mango to taste.
  • 7 serve.

Avocado Dressing For Vegetable Salads

Ingredients

  • 2 avocados, pureed
  • 1 1/3 cups sour cream (lite is ok)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon chervil
  • 1 dash onion powder
  • 1 dash tabasco sauce
  • 4 teaspoons fresh lemon juice

Recipe

  • 1 combine all the ingredients and chill for 30 minutes.

Avocado Gelatin Salad

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 2 envelopes unflavored gelatin
  • 1/4 cup cold water
  • 1 cup boiling water
  • 1 lemon, juice of
  • 1 dash hot pepper sauce
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon onion juice
  • 2 ripe avocados
  • 1 cup sour cream
  • 1 cup mayonnaise

Recipe

  • 1 soften gelatin in cold water for 5 minutes.
  • 2 dissolve softened gelatin,in boiling water.
  • 3 add lemon juice, hot pepper sauce, salt, pepper, and onion juice.
  • 4 cool.
  • 5 stir in mashed avocado, sour cream, and mayonnaise.
  • 6 beat to blend.
  • 7 pour into 1 1/2 quart mold.
  • 8 chill until firm.

Avocado Dressing For B-l-t Salad T-r-l

Ingredients

  • Servings: 6
  • 1 large avocado (peeled & mashed)
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic salt (or less)
  • 3 drops hot pepper sauce (or less)
  • 3 cups mixed greens (torn or shredded)
  • 3 medium tomatoes (cut in thin wedges) or 1 cup cherry tomatoes (cut in half)
  • 1/2 lb bacon, cooked and crumbled
  • 3/4 cup crouton (optional)

Recipe

  • 1 dressing:.
  • 2 in small bowl, combine all dressing ingredients; beat at low speed until smooth.
  • 3 cover; refrigerate several hours to blend flavors.
  • 4 salad:.
  • 5 at serving time, arrange salad ingredients on 6 individual plates or toss in large salad bowl.
  • 6 serve with dressing.

Apricot Congealed Salad

Ingredients

  • 1 (8 ounce) can crushed pineapple
  • 1 (3 ounce) box apricot gelatin
  • 1 cup buttermilk
  • 1 (8 ounce) container cool whip
  • 1/2 cup walnuts, if desired

Recipe

  • 1 heat crushed pineapple and jello until dissolved.
  • 2 refrigerate until cooled.
  • 3 add buttermilk, cool whip and nuts.
  • 4 refrigerate until set.
