- 2 cups casaba honeydew melon

- 1 begin by making sure your melons are ripe.
- 2 peel, seed and cube the melons into bite size chunks, or use a melon baller; place in a large bowl.

- 1 dressing -- mix all the ingredients and set to the side until the pasta and asparagus are cooked.
- 2 salad -- in a large pot of salted water, boil the pasta according to directions. approximately 3 minutes before the pasta is done, add the asparagus until is comes out al dente. now drain the pasta and asparagus. rinse under cold water for just a few seconds to stop the cooking process and cool slightly.
- 3 combine -- now toss the still slightly warm pasta with the dressing. add in the scallions, extra salt and pepper and serve garnished with the cheese fresh lemon slices. a nice simple salad!
- 4 now this is a very light tasting salad with a very simple dressing. it doesn't have bold flavors, but subtle flavors which is a nice compliment to a fresh herb roasted chicken breast or piece of fish. this is all about fresh subtle flavors.

- 1 cook ground beef until throughly cooked, add pepperoni. add onion, celery and bell pepper, simmer until the veggies are soft. add garlic, parsley, tomato sauce, bay leaf, basil, italian seasoning. add salt and pepper to taste.
- 2 simmer at least 1 hour until sauce is thickened.
- 3 spray lasagna pan with pam or what ever you have on hand. put cooked noodles on bottom of pan, put half of meat mixture on top of noodles, add both cheeses making sure to remove bay leaves. repeat process, adding more of the cheese on the top of the lasagna.
- 4 bake at 350°f until cheese is melted and just starting to brown. let sit for 10 minutes before serving.
- 5 this is delicious with a green salad and garlic bread. enjoy!

- 1 small red bell pepper, diced

- 1 lb sirloin steak
- 1/3 cup cucumber, chopped
- 1/3 cup red bell pepper, chopped

- 1 heat your grill pan or grill to medium-high heat.
- 2 equally distribute the lettuce between 3 or 4 bowls (or 2 if you're feeding big appetites) and top with the chopped veggies and croutons if desired.
- 3 sprinkle the steak liberally with the blackening seasoning and place in hot grill pan. cook 3 minutes per side for medium rare. (the steak i used was about 3/4 inch thick.).
- 4 once cooked to desired doneness, let the meat rest a few minutes before slicing into strips. (you may cut it into more bite size pieces but it will not be as pretty.).
- 5 place the steak slices on top of each salad. top the warm meat with the bleu cheese and serve with the balsamic on the side.
