Black Bean Salad

Ingredients

  • Servings: 2
  • 1 (20 ounce) can black beans, rinsed and drained
  • 2 tablespoons fresh lemon juice
  • olive oil
  • salt and pepper
  • 1/4 cup fresh parsley, chopped
  • 2 -3 garlic cloves, chopped
  • dry-cured black olives, pitted and halved
  • 1 red bell pepper, diced
  • 1/2 cup goat cheese

Recipe

  • 1 toss beans gently with lemon juice, olive oil, salt, pepper, parsley and garlic.
  • 2 place in serving dish.
  • 3 garnish with black olives and red pepper for crunch and color.
  • 4 sprinkle goat cheese over top.
  • 5 serve at room temperature.
