Black Bean Salad

Ingredients

- 1 (20 ounce) can black beans, rinsed and drained
- 2 tablespoons fresh lemon juice
- olive oil
- salt and pepper
- 1/4 cup fresh parsley, chopped
- 2 -3 garlic cloves, chopped
- dry-cured black olives, pitted and halved
- 1 red bell pepper, diced
- 1/2 cup goat cheese
Recipe
- 1 toss beans gently with lemon juice, olive oil, salt, pepper, parsley and garlic.
- 2 place in serving dish.
- 3 garnish with black olives and red pepper for crunch and color.
- 4 sprinkle goat cheese over top.
- 5 serve at room temperature.
