Black Bean Luau Salad

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 (20 ounce) can pineapple chunks, drained
  • 1 (16 ounce) can black beans, rinsed and drained
  • 1 1/2 cups rice, cooked
  • 1 1/2 cups chicken breasts, cooked and cubed
  • 1 medium bell pepper, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup green onion, chopped
  • 1/2 cup fat-free honey-dijon salad dressing

Recipe

  • 1 combine all ingredients except dressing in large bowl.
  • 2 rinse rice with cold water to avoid "gloppy" leftovers.
  • 3 pour dressing over salad.
  • 4 toss to coat.
