Black Bean Luau Salad

Ingredients
- Servings: 8
- 1 (20 ounce) can pineapple chunks, drained
- 1 (16 ounce) can black beans, rinsed and drained
- 1 1/2 cups rice, cooked
- 1 1/2 cups chicken breasts, cooked and cubed
- 1 medium bell pepper, chopped
- 1/2 cup celery, chopped
- 1/2 cup green onion, chopped
- 1/2 cup fat-free honey-dijon salad dressing
Recipe
- 1 combine all ingredients except dressing in large bowl.
- 2 rinse rice with cold water to avoid "gloppy" leftovers.
- 3 pour dressing over salad.
- 4 toss to coat.
