Beef Fillet And Asparagus Salad

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 lb filet of beef, whole
  • 1 pint red wine (use a good wine, don't spoil your dish with plonk)
  • black pepper, course ground
  • 8 -10 asparagus spears
  • butter lettuce
  • 2 ounces avocado dip
  • 2 ounces mayonnaise
  • fresh herb (to garnish) (optional)
  • nasturtium petals (to garnish) (optional)

Recipe

  • 1 place fillet in a baking dish and pour wine over.
  • 2 sprinkle with pepper.
  • 3 bake at 350 degrees f for 40-45 minutes.
  • 4 cool.
  • 5 cook asparagus until tender.
  • 6 refresh with cold water.
  • 7 arrange lettuce leaves on a large round platter.
  • 8 slice fillet thinly and roll each slice around an asparagus spear.
  • 9 arrange on lettuce (like the spokes of a wheel).
  • 10 mix dip and mayonnaise together and spoon over beef.
  • 11 garnish with fresh herbs and nasturtiums.
