Ingredients
- Servings: 3
- 6 large hard-boiled eggs, coarsely chopped
- 1 cup chopped celery
- 3 green onions, chopped
- 7 slices bacon, cooked and crumbled
- 1/2 cup mayonnaise
- 1 tablespoon prepared horseradish
- 1/8 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons chopped fresh parsley
Recipe
- 1 combine first 4 ingredients in a large bowl; set aside.
- 2 combine mayonnaise and next 3 ingredients; fold into egg mixture sprinkle with parsley and serve.
- 3 salad can be chilled up to 24 hours; bacon will soften slightly.
- 4 serve this as a salad or as a sandwich filling.
