Bacon And Egg Salad

Total Time: 33 mins Preparation Time: 10 mins Cook Time: 23 mins

Ingredients

  • Servings: 3
  • 6 large hard-boiled eggs, coarsely chopped
  • 1 cup chopped celery
  • 3 green onions, chopped
  • 7 slices bacon, cooked and crumbled
  • 1/2 cup mayonnaise
  • 1 tablespoon prepared horseradish
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh parsley

Recipe

  • 1 combine first 4 ingredients in a large bowl; set aside.
  • 2 combine mayonnaise and next 3 ingredients; fold into egg mixture sprinkle with parsley and serve.
  • 3 salad can be chilled up to 24 hours; bacon will soften slightly.
  • 4 serve this as a salad or as a sandwich filling.
