Black Bean Corn Salad

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 16 ounces black beans
  • 16 ounces corn
  • 1/2 cup red onion
  • 2 avocados
  • 1/4 cup rice vinegar
  • 1 tablespoon garlic salt
  • 1/2 teaspoon black pepper

Recipe

  • 1 drain and rinse beans, pour into bowl.
  • 2 drain corn, mix with beans.
  • 3 chop onion and add to beans and corn.
  • 4 peel and dice avacodo into small pieces, add to other ingredients.
  • 5 pour in vinegar and garlic and pepper.
  • 6 gently stir together.
  • 7 refrigerate for at least 30 minutes. serve chilled.
