Black Bean Salad

Ingredients

  • Servings: 4
  • 2 (1 lb) cans black beans
  • 1 (1 lb) can corn
  • 1 (14 ounce) can crushed tomatoes
  • 1 small green pepper, chopped
  • 1 small red pepper, chopped
  • 2 green onions, chopped
  • 2 tablespoons cilantro
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • pepper (to taste)

Recipe

  • 1 drain beans and corn.
  • 2 gently mix beans, corn, tomatoes, green pepper, red pepper, green onion, cilantro, basil, oregano and pepper.
  • 3 whisk olive oil and balsamic vinegar, then pour over mixture.
  • 4 refrigerate 2 to 6 hours. serve cold.
