Asparagus Salad

Total Time: 13 mins Preparation Time: 10 mins Cook Time: 3 mins

Ingredients

  • 1 lb asparagus spear
  • 1 head romaine lettuce
  • 1/4 cup pine nuts
  • 1/2 cup prosciutto, chopped

Recipe

  • 1 break off the woody ends of the asparagus.
  • 2 cut asparagus into one inch pieces.
  • 3 blanch asparagus pieces in a bot of boiling water for 3 minutes, or until tender-crisp.
  • 4 tear romaine lettuce and place into a bowl.
  • 5 add remaining ingredients to the lettuce.
  • 6 dress with salad dressing of your choice (we usually use ranch or cesear) and enjoy!
