Asparagus Salad

Ingredients
- 2 cups fresh asparagus (chopped)
- 1 cup purple onion (sliced)
- 1 cup artichoke heart (chopped)
- 1/2 cup black olives (sliced)
- 1 cup tomato (chopped)
- 5 ounces feta (crumbled)
- 1/3 cup fresh cilantro
- 1/3 cup fresh italian parsley
- 3 tablespoons fresh dill
- 1/2 cup mayonnaise
- 4 tablespoons dijon mustard
- 2 tablespoons balsamic vinegar
- 1 tablespoon sea salt
Recipe
- 1 dressing: mix cilantro, italian parsley, dill, mayonnaise, dijon mustard, balsamic vinegar & sea salt.
- 2 boil asparagus for about 4 min, then rinse with cold water and let cool.
- 3 in a large bowl mix asparagus, purple onion, artichoke hearts, black olives, tomatoes & feta. then add your dressing and enjoy!
