Asian Noodle Salad

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 8 ounces spaghetti
  • 1/2 lb shiitake mushroom (dried works, just rehydrate them first)
  • 1 bell pepper, thinly sliced
  • 1/4 cup rice vinegar
  • 1/4 lb firm tofu, diced
  • 6 teaspoons soy sauce
  • 3 teaspoons peanut oil
  • 1 teaspoon grated ginger

Recipe

  • 1 cook the pasta. slice mushrooms. add mushrooms and peppers to the pasta water in the last 2 minutes of cooking. drain.
  • 2 in a small bowl, mix dressing ingredients. transfer pasta to serving bowl. add the tofu. pour dressing over and toss to coat.
  • 3 serve hot or cold.
