Asian Noodle Salad

Ingredients

- 8 ounces spaghetti
- 1/2 lb shiitake mushroom (dried works, just rehydrate them first)
- 1 bell pepper, thinly sliced
- 1/4 cup rice vinegar
- 1/4 lb firm tofu, diced
- 6 teaspoons soy sauce
- 3 teaspoons peanut oil
- 1 teaspoon grated ginger
Recipe
- 1 cook the pasta. slice mushrooms. add mushrooms and peppers to the pasta water in the last 2 minutes of cooking. drain.
- 2 in a small bowl, mix dressing ingredients. transfer pasta to serving bowl. add the tofu. pour dressing over and toss to coat.
- 3 serve hot or cold.
