Apple And Carrot Salad

Ingredients

  • Servings: 8
  • 2 large apples, 1 red and 1 green, cored, thinly sliced, cut into matchsticks
  • 1 1/2 tablespoons fresh lemon juice
  • 3 cups uncooked carrots, cut into matchsticks (many stores sell these precut)
  • 1/4 cup chives, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon table salt
  • 1/4 teaspoon black pepper (to taste)
  • 2 ounces feta cheese, french-variety suggested, crumbled

Recipe

  • 1 place apples in a large bowl and toss with lemon juice.
  • 2 add carrots, chives, oil, sugar, salt, pepper and cheese; toss to mix thoroughly.
  • 3 yields about 3/4 cup per serving.
