Apple And Carrot Salad

Ingredients

- 2 large apples, 1 red and 1 green, cored, thinly sliced, cut into matchsticks
- 1 1/2 tablespoons fresh lemon juice
- 3 cups uncooked carrots, cut into matchsticks (many stores sell these precut)
- 1/4 cup chives, chopped
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1/2 teaspoon table salt
- 1/4 teaspoon black pepper (to taste)
- 2 ounces feta cheese, french-variety suggested, crumbled
Recipe
- 1 place apples in a large bowl and toss with lemon juice.
- 2 add carrots, chives, oil, sugar, salt, pepper and cheese; toss to mix thoroughly.
- 3 yields about 3/4 cup per serving.
